Head Trainer

Affectionately known to our trainees as "Uncle Loy", Loy comes with more than 40 years of culinary management and training from Bermuda, Canada, Australia, USA, and Southeast Asia.

Master Trainer

Known for his structured way of teaching, Eric has represented Singapore in various gourmet competitions around the region including the prestigious Culinary Olympics.

Eng Eng Temp

Wong Eng Eng
Trainer

A certified trainer for people with Autism, Eng Eng graduated from the world-renowned Le Cordon Bleu in Pastry studies. She also ran her own e-commerce pastry business.

Michelle has over 20 years of experience in the hawker, F&B, and hospitality industries. Passionate about cooking, she left Singapore Airlines to operate a coffee shop for 5 years.

F&B Safety and Hygiene Policies and Procedures

Registration Code: FSH

Overview: This WSQ class aims to equip food handlers with the knowledge and application skills to follow food & beverage safety and hygiene policies and procedures.

It comprises 6 hours of training and 1.5 hours of assessment. Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Practise good hygiene
  • Use ingredients, handle and store food safely
  • Maintain cleanliness of utensils, equipment and storage/service area


Full Nett Fees:  $160.50 before SkillsFuture Singapore funding (inclusive of GST)

Maintain F&B Production Environment

Registration Code: MFP

Overview: This WSQ class aims to equip food handlers with the knowledge and application skills to maintain a food & beverage production environment

Duration: 2 days of training (14 hours). Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Clean food & beverage preparation equipment
  • Maintain supplies
  • Perform end-of-business day duties like disposing trash, and washing pots and wares

Maintain Safe & Secure Working Environment

Registration Code: MSS

Overview: This WSQ class aims to equip learners with the knowledge of safe work procedures, using equipment and hazardous material safely and preventing injury and accidents.

It comprises 2 days of training (17.15 hours). Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Maintain safe work environment by using equipment safely
  • Use proper lifting, pushing and pulling techniques
  • Follow directions for handling hazardous materials

Prepare Basic
Chinese Rice Dishes

Registration Code: BCR

Overview: This WSQ class aims to equip learners with the knowledge of preparing a range of Chinese-style rice dishes

Duration: 6 hours of training and 1.5 hours of assessment. Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Prepare Teochew Style Porridge
  • Prepare Cantonese Style Congee
  • Prepare Egg Fried Rice
  • Prepare Yang Zhou Fried Rice

Maintain Quality Control Procedures

Registration Code: MQC

Overview: This WSQ class aims to equip learners with the basics of food portion control as well as food quality and presentation.

Duration: 2 days of training (17.83 hours). Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Maintain quality control of food products
  • Follow food & beverage hygiene and safety guidelines
  • Follow portion control guidelines

Provide Hot Beverage
Service

Registration Code: PHB

Overview: This WSQ class aims to equip learners with the basics of preparing local hot beverages including the different kopi and teh combinations.

Duration: 2 days of training. Upon successful completion of the course and assessment, a Statement of Attainment (SOA) will be awarded to the participants.

Objective:

  • Identify types of hot beverages
  • Assemble tools, equipment and ingredients
  • Prepare and serve hot beverages
